Pancake Day comes but once a year, but let’s be honest – every day should be Pancake Day! And with this delicious and super-simple recipe, pancakes can be a guilt-free meal you enjoy every morning. Packed with protein and fresh fruit, these pancakes are essentially made of eggs and bananas, with a few optional extra ingredients to add some natural spice and sweetness.
HEALTHY 2-INGREDIENT PANCAKES (Serves 2)
- 4 free-range eggs, raw
- 2 ripe bananas, peeled
- 1 tsp chia seeds (for a fibre & omega-3 boost)
- Dash of cinnamon (for some spice)
- Drop of vanilla essence (for some sweetness)
In a big bowl, add bananas and smash with a fork until smooth.
Add eggs to banana and whisk together.
If desired, add some chia seeds, cinnamon and vanilla essence.
Heat non-stick pan with some coconut oil and pour in 1/4 of the mixture at a time to make small pancakes (this makes it easy to flip with a spatula).
Consider warming the oven with a plate to keep the pancakes hot while you’re busy making the rest.
- Natural yoghurt with strawberries and chia seeds
- Nut butter with mixed berries or honey
- Maple syrup
- Raspberry Jam
- Lemon, Cinnamon and Coconut Sugar
- Ice cream!
